Key Ingredients For This Chicken Keto Soup Recipe

- Avocado Oil: A neutral cooking oil. If you don’t have avocado oil, you could substitute olive oil.
- Celery and Onions: Finely chopped. Make sure to stick to the allotted amount of onion in this recipe as onions are to be used in moderation for the keto diet.
- Kosher Salt and Black Pepper
- Garlic: Minced garlic is the perfect addition for any cold weather soup!
- Fresh Herbs: Thyme and Paprika
- Chicken Broth: Buy it premade chicken broth or bone broth or make your own
- Boneless Skinless Chicken Thighs: Cubed
- Cauliflower Rice: you can use thawed frozen cauliflower rice, refrigerated (sold in bags in the produce department) or make your own. Carolyn suggests that we can sub in zoodles for Keto Chicken Noodle Soup!
How To Make Keto Soup with Chicken & Cauliflower Rice

- Step 1: Sauté the onion and celery to soften them.
- Step 2: Add in the aromatics and let them bloom in the hot oil. This will help bring out the flavor of the garlic, thyme and paprika.
- Step 3: Then stir in the broth and then add the chicken and riced cauliflower and simmer until cooked through.
Expert Tips and Tricks For This Low-Carb Chicken Soup Recipe
Low Carb Soup Substitutions and Variations
- To turn this keto soup recipe into a low-carb chicken noodle soup, just replace the cauliflower rice with zoodles or low-carb noodles of your choice! I love the idea of adding zucchini noodles!
- Instead of boneless chicken thighs, you can also use chicken breast or a rotisserie chicken. We like to keep shredded chicken on hand for an easy protein source. I simply cook it in the Instant Pot with a bit of broth for 20 minutes, then shred it with two forks. Stir it into the soup, and heat through.
- We added on some parsley for a bit of color, but feel free to omit it if you don’t have any on hand.
- You can also add a teaspoon of chopped rosemary with the aromatics for more flavor.
How to Make the Cauliflower Rice From Scratch
- Cut the cauliflower in half and remove as much of the stem and leaves as possible. Then, cut the cauliflower into small florets removing any of the remaining stem. Place the cauliflower florets in a food processor or blender and pulse just until the cauliflower is broken down into small rice sized pieces.
- If you don’t have a food processor or blender, grate the cauliflower on the large holes of a box grater after cutting in half and removing the stems and leaves.
You can also use purchased fresh or frozen cauliflower rice to save time!
Keto Friendly Serving Suggestions For Soup
- Serve with a keto-friendly bread alternative such as Cloud Bread or Air Fryer Keto Rolls.
- Pair with salad such as Keto Wedge or low carb broccoli salad.
- Opt for a little more protein, such as our Healthy Deviled Eggs or Ham Roll Ups.
Storing Low Carb Chicken Soup
- Leftovers: leftovers can be kept in the refrigerator up to five days.
- Storage Tip: Make sure to cool the soup before closing the resealable container.
- Freezing: Freeze up to two months. For best texture omit the cauliflower rice if you are going to freeze it and stir it in when you reheat it.
- Reheating: Simmer over medium-high heat in a small saucepan, stirring often to reheat the soup.

Ingredients
- 2 tablespoons avocado oil
- 2 stalks celery, chopped
- 1/4 cup chopped onions
- salt and pepper, to taste
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme leaves
- 1/2 teaspoon paprika

Can you throw this into a slow cooker?
Hi Sandi! The veggies might get mushy in a slow cooker. It’s easy to prep ahead by chopping everything and then it takes less than 30 minutes to throw together. Super quick and easy!
I made it and loved it!
Great Jane!! Glad you you loved it! Thanks for letting us know.
This was really good. I substituted the thyme for Italian seasoning because I don’t like just thyme by itself. I also added the cauliflower with the onion and celery and cooked them together. This gave the cauliflower more of a rice texture in the soup. Will be making this again!
Hi Jennifer! Great idea to sub in Italian Seasoning! It really is an awesome soup.
OMG!!! This is the BEST soup I’ve EVER tasted! Seriously. I took the leftovers to work and everyone who tasted it wanted the recipe!! I used roasted chicken stock and smoked paprika. LOVE, LOVE!
Yay Sherri!! So happy you and your coworkers enjoyed the soup! I bet it was amazing with your roasted chicken stock and smoked paprika is my favorite!!
Loved this! I did make a few changes though: I added sliced frozen carrots during the sauté phase, I boiled and shredded boneless skinless chicken breast instead of thighs, I also added fresh kale at the same time I added the cauliflower rice and the chicken. My family raved about it…even my 6 yr old! Thank you!
Thanks for sharing your additions Misti! You know you’re doing something right when a 6 year old raves about it:) I love how adaptable soup can be.
MADE this and loved it. I did add some extra veggies in just because I love veggies. This recipe is definitely a keeper!
Thanks Ruth! You can never have enough veggies! Glad you enjoyed it!
That keto chicken soup looks absolutely fantastic. Beautiful photos, too. I look forward to trying this. Thanks, Stephanie!
Thanks Bella! It really is a delicious and healthy soup. Let us know what you think when you try it!
The flavor was excellent, but the soup was too brothy to be filling by itself. While adding sour cream helped thicken it up while also adding fat, I felt this soup was lacking something… can’t figure out what though.
Hi Jalina! If you’re trying to keep it keto maybe just adding less broth would be helpful. Also, if you use homemade chicken stock instead of store bought broth that would really up the flavor and probably make it feel more filling. Adding more veggies like kale or spinach would also bulk it up a bit. Let us know if you try it again!
Good morning, if I’m adding the cauliflower as I eat it do I cook the cauliflower rice or just put it in fresh and microwave it? Also could I cook this in the slow cooker?
Hi Kayla! You do not need to cook the cauliflower rice before you add it to the soup. It cooks with the chicken. I’m not sure this soup would do well cooked in a slow cooker. The veggies would probably get really mushy. If you’re trying to save time, try chopping and prepping everything ahead of time. It would take less than 30 minutes to throw together if all the ingredients are ready to go. Using purchased fresh or frozen cauliflower rice is a huge time saver, too! Let us know if you try it!
Stephanie, this soup is delicious! I made it as directed, adding the frozen cauliflower after the chicken had been added a few minutes. In my opinion, this is a perfect recipe. It’s economical, easy and tasty.
Thanks Nita!! Economical, easy and tasty… the trifecta of soup recipes:)
Love soups on a cold day (well.. actually..any day!)
