No matter what life throws at us, I wanted to make sure you knew I got your back when it comes to getting dinner on the table. So amidst all the noise and chaos, if you’re struggling with “what’s for dinner?” I am here to say: This healthy chicken thigh recipe is what’s for dinner!
I know some of you tell me that you make the same five recipes every week. It makes meal planning and shopping so much easier, and when you know the recipes, you can be sure what the whole family will like. I totally get that!
But the same five recipes can get pretty boring. Right? Right.
So I am guessing you are pretty psyched to see a 5-ingredient recipe showing it’s pretty face around here today. You may even be thinking it could be a contender. Maybe, just maybe it will become one of those family pleasing dinner staples. I hope so.
I loved the fact that this honey mustard chicken thigh recipe makes 6 thighs, enough for the four of us for dinner, plus two thighs left over for our lunches too. Jase and I eat salad with protein for lunch a lot, so these honey mustard chicken thighs were perfect for that.
How to Make Honey Mustard Chicken Thighs
One of the best parts about this easy chicken recipe (besides the fact that it uses just 5 simple ingredients) is that you don’t have to let the chicken thighs marinate for a long time to get that amazing honey mustard flavor. Just whisk together the marinade, coat the chicken in it, and bake! Here’s exactly how I made these honey mustard chicken thighs:
Make the honey mustard sauce
The healthy honey mustard marinade is a simple combination of mustard, honey, fresh thyme, and salt. I used brown deli mustard to really amp up the mustard flavor, but feel free to use whatever is in your pantry.
Coat the chicken
Fully coat the chicken thighs in the honey mustard sauce, making sure to get it into all the crevices (you may need to use your hands to really work it in!).
How Long To Roast Boneless Chicken Thighs at 375
- After the chicken thighs are fully coated in the honey mustard, arrange them on a parchment paper-lined baking sheet (the parchment paper makes for easier cleanup).
- Roast the honey mustard chicken thighs for 30 to 40 minutes. I use a digital instant read thermometer to check that they’ve reached an internal temperature of at least 165 degrees F.
- To make sure they stay juicy once they come out of the oven, let them rest for a few minutes before serving.
Steps To Make This Recipe
- 1. Combine mustard, honey, thyme and salt in a large bowl and whisk to combine
- 2. Add boneless chicken thighs and turn to coat in the honey mustard mixture.
- 3. Line a large rimmed baking sheet with parchment.
- 4. Transfer the chicken to the baking sheet and roast 30 to 40 minutes.
Can You Make This Baked Honey Mustard Chicken Recipe Ahead?
- Yes! You have two options. You can mix the chicken with the honey mustard mixture up to 1 day ahead and then bake them.
- Or they reheat really well. You can do so in the microwave, until they are steaming hot. Or you can set them in a pyrex baking dish and cover them with foil. Then just bake at 350 degrees for 20 minutes until they are steaming hot.
What To Serve With Honey Mustard Chicken Thighs
- The honey mustard is a classic mellow flavor that pairs well with so many recipes. I like them with Caesar Salad made with my Egg Free Caesar Dressing. I have been making Homemade croutons with my day (or two) old sourdough bread.

Ingredients
- 3 tablespoons brown deli mustard
- 2 tablespoons honey
- 2 teaspoon chopped fresh thyme
- ½ teaspoon salt
- 6 boneless skinless chicken thighs, about 2 pounds
Instructions
- Preheat oven to 375ºF. Line a large rimmed baking sheet with parchment.
- Whisk honey, mustard, thyme and salt in a medium bowl. Add chicken thighs and turn to coat. Arrange chicken on the parchment-lined baking sheet, tucking them into neat thigh shapes.
- Roast chicken until cooked through and browned in spots, 30 to 40 minutes *See note. Let rest 4 to 6 minutes before serving.

Hi! I’ve tried something similar before and liked the fact you added some fresh thyme to it. Just wondering though, if I wanted to toss in also some thinly cut potatoes, how would I do it? Do I place them at the bottom? Do I need to increase the cooking time at all?

Yes! They will take closer to an hour. Check to see if they are done all the way to the bone by making sure they are no-longer pink. Or if you’re comfortable with an instant read thermometer, check that they are 165 at the thickest part near the bone.
