Today’s #SaladMonth recipe is for a simple, healthy crouton recipe made from rustic bread, olive oil and a little seasoning. If you don’t already make your croutons from scratch, you’ll see that making homemade croutons is so easy! You’ll never need to buy them again.
I can think of several times since becoming a mom that I have felt proud, even borderline smug, about my daughters’ blossoming foodieness. Like when at 7 months my daughter ate a cucumber roll at a sushi restaurant, or at age 2 my little one ate an entire bowl of Greek olives off the Thanksgiving appetizers table while nobody was paying attention. Or when I asked my daughter, age 4, if she even knew what McDonald’s was. To which she replied, “Yes I do know what it is Mom, it’s a farm.” It would be hard to beat that moment!
One of the more recent times was early last summer when she asked if she could make herself a salad for lunch — mind you, she was 7 at the time and her little sis was 5. Thinking this was some sort of make-believe game she and her little sister were playing I said that was fine by me and went about my business. Later, I came back to the kitchen to find they had picked greens, chives and snap peas out of the garden put them in bowls, made homemade lemon dressing and cut and toasted their own croutons in the toaster oven!!! To me, this topped even the McDonald’s comment.

Croutons would certainly fit the bill for me, and apparently my daughter would agree. I mean really, what would my excuse be for buying them if even my daughter can whip them together from scratch for her lunch? And since May is National Salad month, I thought it only fitting to share them for the Redux this time around.
How to Make Croutons in the Oven
These homemade croutons are really easy to make and require just a handful of ingredients. The only major prep work you’ll have to do is cut the bread into 1-inch cubes. But besides that, you just mix everything together and bake! Here’s how I made this easy crouton recipe:
1. Coat the bread in the seasonings — Toss the bread cubes with oil, herbs, garlic powder and salt in a large bowl until the herbs are evenly distributed.
2. Bake the homemade croutons — Spread the bread cubes out onto a greased baking sheet, then bake until the croutons are crispy on the outside and starting to brown. Make sure to stir the croutons once halfway through to ensure they cook evenly and don’t become too brown on one side.
3. Let the croutons cool — You need to let these homemade croutons cool completely before serving them. This will give the croutons time to crisp up fully and will prevent you from burning your mouth.
Ways to Eat Croutons
Obviously, croutons are wonderful on salads. These homemade croutons would be especially great paired with this overnight kale caesar or even on this French bistro brunch salad. But did you know that croutons also pair perfectly with a variety of soups? Sprinkle a few croutons on top of a steaming bowl of carrot ginger soup, creamy cauliflower soup, or slow cooker kielbasa, cabbage, and potato soup. The options are pretty much endless!

Making this homemade crouton recipe is so easy and healthy! All you need is whole-grain bread, olive oil and seasoning. Bonus: it takes 5 minutes of prep!
- ½ pound rustic whole-grain bread, cut into 1-inch cubes
- 1 tablespoon extra-virgin olive oil
- ½ teaspoon Italian seasonings or Herbes de Provence
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- Preheat oven to 350 degrees F. Lightly coat a large rimmed baking sheet with cooking spray.
- Toss bread, oil, herbs, garlic powder and salt in a large bowl until evenly moist and the herbs are evenly distributed. Spread the bread cubes out onto the prepared baking sheet.
- Transfer to the oven and bake, stirring once until the croutons are crispy on the outside and starting to brown, 16 to 18 minutes total. Cool before serving.
