  • Only calls for 7 ingredients, including salt
  • A delicious and unique way to showcase summer peaches

Key Ingredients For This Peach Sandwich

  • Goat Cheese: Use fresh plain goat cheese without herbs. I love the one from Vermont Creamery.
  • Plain Non-Fat Yogurt: Reduced or whole-fat yogurt is also fine here.
  • Pumpkin Pie Spice
  • Kosher Salt
  • Honey Whole-Wheat Bread: I like this bread for this panini because it is soft and slightly sweet. Here’s our recipe for honey wheat bread if you want to make yours from scratch. Or you can make it with bakery bread. Obviously, other bread would work—you could use a sourdough, a white sandwich bread or even gluten-free bread.
  • Peach: Look for ripe peaches. If you can’t find them, nectarines are a good substitute.
  • Raw Agave or Honey

Step-by-Step Instructions

Step 1: Preheat panini press

Preheat the panini press to medium-high.

Step 2: Make goat cheese mixture

While the panini press preheats, mash together the goat cheese, yogurt, pumpkin pie spice and salt in a medium bowl to make a smooth spreadable mixture. Lay the bread out on a work surface. Spread the goat cheese mixture over four slices of bread, then place a single layer of peach slices on two of them. Place the remaining two slices on top to form two sandwiches.

Step 3: Cook peach panini sandwich

Lightly coat the panini press with cooking spray (or brush with a tiny bit of melted butter or oil.) Add sandwiches and cook until the sandwiches are toasted and hot all the way through, 5 to 8 minutes. Transfer to a cutting board.

Step 4: Serve peach and goat cheese panini

Carefully cut the peach panini in half, and serve with agave or honey.
