Roasted Cranberry and Goat Cheese Flatbread Pizza
These Roasted Cranberry Flatbreads with Goat Cheese are an easy and unexpected holiday appetizer. These easy savory, sweet and tart pizzas are made with cranberries, thyme, shallot and fresh goat cheese.

I love holiday traditions. Getting our Christmas Tree from the same place every year. Setting up my goofy little Santa collection. Sending out holiday cards. Waiting for the kids to go to bed on Christmas Eve so we can sneak the presents from Santa under the tree for them to discover on Christmas morning. {I’ll be sad to say goodbye to that one.} I even like Christmas Carols in moderation.
Other holiday traditions can happily go bye-bye as far as I’m concerned. Like doorbusters. Why is that a thing? Seriously? I just don’t get it. I mean, I totally understand wanting to save money, but not at the expense of spending time with my family on Thanksgiving.
Or the elf on a shelf.
Don’t get me started.
I also could do without the boring holiday meals or tired bland recipes that involve canned soup. Can we make them go away?
Personally, I love trying new recipes for Christmas. I think of getting together with friends and family over the holidays as an opportunity to go big or go home! {Did I tell you that last year I made roast goose for Christmas eve?!} I love planning out all of the fun and festive holiday recipes for the hors d’oeuvres parties and formal holiday meals. I like rocking the boat a bit. I have been known to bring recipes like these Lion’s Head Meatballs to parties. Take that, tradition!
About This Cranberry Flatbread Recipe
Today I came up with this super easy but not-traditional Holiday appetizer with a store-bought flatbread crust.
I loved the idea of taking an expected holiday ingredient, like cranberries, and do something totally unexpected with them.
For this Cranberry Flatbread, I roasted the cranberries in the oven with maple syrup, and shallots to make an easy warm chutney of sorts.
Then I spread it out on the flatbread ( I chose the long rectangular ones since they make a great appetizer) and crumbled some Vermont goat cheese over the top. They came out great and would be a fun twist on a holiday appetizer. Totally non-traditional!

Description
These Roasted Cranberry Flatbreads with Goat Cheese are an easy and unexpected holiday appetizer. These easy savory, sweet and tart pizzas are made with cranberries, thyme, shallot and fresh goat cheese.
Ingredients
- 1 1/2 cup fresh cranberries
- 3 tablespoons pure maple syrup, dark or amber
- 1 tablespoon finely chopped shallot
- 1/2 teaspoon chopped dry thyme
- 1/4 teaspoon salt
- 2 purchased flatbreads, (14 oz package)
- 1 4–ounce package fresh goat cheese, crumbled
Instructions
- Preheat oven to 375 degrees F.
- Mix cranberries, maple syrup, shallot, thyme and salt in an 8 by 8-inch baking dish. Roast, stirring once or twice, until the cranberries burst and the mixture is bubbling and caramelizing along the edge, about 15 minutes. Remove from oven and stir until the cranberries are broken down and the mixture is thick. Set aside.
- Lay flatbreads out on work surface. Spread the hot cranberry mixture over the flatbreads, dividing evenly. Top with the goat cheese. Bake directly on the oven rack until the cheese is softened and flatbread is crispy, 8 to 10 minutes. Cut into 8 small wedges or strips each.

I made this flatbread for a company pot luck because it looks delicious. After completion, it did look beautiful. I tried it with a couple of close coworkers, and they joked if I served it, I would surely be demoted. The flavors are tart and confused. I didn’t end up serving it, unfortunately. It could have been my error? I bought all fresh ingredients. Oh well, it was a learning experience!
That’s interesting Megan. Cranberries are very tart, so I can understand that would be a surprise if you weren’t expecting that. I have one question: did you use 1/4 teaspoon of table salt? Salt is an important element when contrasting with sour flavors. If you subbed kosher or sea salt instead you could possibly end up with an overly sour taste profile. Hi there! I’m wondering if I did something wrong because this was a total disaster at a get together I was part of. Guest complained about the thyme and the cranberry taste together, which had a “musty” “moldy” taste. I was so embarrassed because the flatbreads looked spectacular! I’m wondering what I can do to sweeten this up and what other herb might pair well with the cranberries?
That’s too bad. You must have been so bummed. I have had that issue with dry thyme before, not in this recipe though. It tastes musty. So I totally know what you’re talking about. I recommend checking the jar of thyme and smell if it seems musty. It may be as simple as just tossing out your thyme and buying a fresh jar. Sometimes it can get funky like that. I am not sure why. Anyway, then next time you make the flatbread you can use the new thyme. Or if you prefer you can use fresh thyme or no thyme at all- and it will still be yummy.
I just had a thought, Nathan. 1/2 teaspoon fresh chopped rosemary would also be really yummy.
