Ingredients

Scale

1/2 cup red wine vinegar

1/4 cup dark maple syrup

1 tablespoon pickling spice* see ingredient note

1 teaspoon salt, divided

Freshly ground pepper to taste

1 small red onion, peeled and very thinly sliced, preferably with a mandolin

1 pound lean ground turkey meat

2 ounces shredded Fontina cheese, about 1/2 cup

4 burger buns, preferably whole-wheat, toasted if desired

4 leaves green leaf lettuce


Instructions

  1. Stir vinegar, syrup, pickling spice, ¾ teaspoon salt and pepper in a small saucepan. Bring to a simmer over high heat and boil 2 minutes, stirring often.
  2. Place onion in a medium heat-proof bowl or measuring cup. Strain the hot vinegar mixture through a fine-mesh sieve over the onions, and toss with a fork. Discard the solids from the sieve. Let onions cool in the pickling liquid until room temperature, stirring every once in a while, about 30 minutes.
  3. Meanwhile preheat grill to medium-high heat. Form turkey into 4 thin patties. Sprinkle both sides with the remaining ¼ teaspoon salt and pepper. Oil grill rack and immediately add burgers. Cook until cooked about half way, 4 to 5 minutes. Turn over, divide Fontina among the burgers and continue cooking until cooked through and no longer pink in the center, 4 to 5 minutes longer. Serve burgers on buns with lettuce. Top with the onions.

Notes

*Ingredient note: Pickling spice is a blend of sweet and spicy whole dried spices used in pickles and many canning recipes. Blends vary by brand but they often include whole allspice berries, bay leaf and mustard seeds. Find pickling spice in the spice section of large supermarkets or the bulk section of health food stores.
