This Smoky Tomato Shallot Dressing by Healthy Seasonal Recipes transforms a salad and pairs well with all your summer veggies.

Smoky Tomato Salad Dressing

  • Author: Katie Webster
  • Total Time: 10 minutes
  • Yield: 1 1/4 cups 1x

This smoky tomato salad dressing made with ripe tomatoes, sherry vinegar and smoked paprika has a woodsy, smoky flavor that pairs beautifully with so many vegetables that are in season during the summer. I love to serve it with grilled eggplant, peppers, zucchini or summer squash or toss it with a big kale salad.

  • 1 small tomato, cored and chopped
  • 1 small shallot, chopped
  • 1 tablespoon plus two teaspoons sherry vinegar
  • 2 teaspoons honey
  • 1 teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon freshly ground pepper
  • ½ cup extra-virgin olive oil

  1. Combine tomato, shallot, sherry vinegar, honey, salt, smoked paprika and pepper in a blender or mini prep and puree until smooth. Alternatively use an immersion blender in a blending jar.
  2. Add oil and puree until smooth.

Storing Instructions: Store in a jar in the fridge for up to 5 days.
