Ground Turkey Taco Recipe

Description

If you love beef tacos, but are looking for a healthier alternative, try these turkey tacos instead. They are made with lean ground turkey meat and hand-blended taco seasonings. We’ve added extra veggies cooked right in for added nutritional benefits, and they can be served in either crispy or soft corn tortillas so everyone can enjoy theirs just the way they like them! 


Ingredients

  • 12 soft corn tortillas, or crispy taco shells
  • 1 tablespoon avocado oil or organic canola oil
  • 1 green or red bell pepper, seeded and diced
  • 1 cup finely chopped onion
  • 1 tablespoon minced garlic
  • 1 pound to 20 ounces ground turkey
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1/8 to 1/4 teaspoon ground chipotle, or to taste
  • 2 tablespoons tomato paste
  • 1/4 cup water
  • 4 ounces shredded Colby Jack or Monterey Jack cheese
  • Chopped tomatoes, salsa, shredded lettuce, diced red onion and avocado for serving

Instructions

  1. Preheat oven to 325 degrees F. Wrap soft tortillas in foil stacked in two packages of four. Place tortillas in hot oven to warm. Or if using crispy shells, follow heating instructions just before serving.
  2. Meanwhile, heat oil in a large skillet over medium-high heat. Add pepper, onion and garlic, and cook, stirring often until the vegetables are softened and beginning to brown, 5 to 8 minutes. 
  3. Add turkey, and cook, breaking up into small pieces as it becomes opaque, until the turkey is completely cooked, 4 to 6 minutes. 
  4. Sprinkle with chili powder, cumin, salt and chipotle, and stir to coat until fragrant, 30 to 90 seconds. 
  5. Add tomato paste and water and stir until the tomato paste is dissolved into the water and it forms a sauce to coat the turkey mixture.
  6. Serve the turkey in the warm tortillas (or crispy taco shells) with cheese and top with desired toppings.

Notes

Make Ahead: The turkey can be cooled and stored in an airtight container up to four days. It can be reheated in a non-stick skillet with a little water (or broth) over high medium heat, stirring often until steaming hot. Alternatively reheat in the microwave for 90 seconds per portion, or until steaming hot.
