Creamy Blue Cheese and Walnut Coleslaw

Description

Creamy coleslaw recipe with blue cheese and walnuts added in. It has a little dill and peppery radishes. It is a delicious low carb and gluten free side dish to serve with beef or pork.


Ingredients

Units Scale
  • 1/2 cup fat-free or low-fat plain Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped dill
  • 1 tablespoon cider vinegar
  • 1 small clove garlic, grated with a microplane zester
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
  • 8 dashes tabasco sauce
  • 1 bunch scallions, very thinly sliced
  • 1 bunch radishes, trimmed and julienne cut
  • 8 cups shredded cabbage
  • 3/4 cup chopped toasted walnuts
  • 2 ounces blue cheese, crumbled

Instructions

  1. Whisk yogurt, mayonnaise, dill, vinegar, garlic, Dijon, salt, pepper and tabasco sauce in a large bowl.
  2. Add scallions, radishes, cabbage and walnuts and stir to coat. Add blue cheese and stir again to combine.

Notes

How to shred cabbage:

To shred cabbage, either slice it thinly with a knife or use a mandolin for super even and thin slices. You can also use a food processor with a grater attachment if you have one.
