Step 1 and 2
Spray with pan spray and line an 8×8-inch baking pan with parchment paper. Make crust by combining flour, oats, coconut, sugar, cinnamon, baking powder and salt. Add melted butter and honey and stir.
Step 3 and 4
Set aside 1 ½ cups of the crumble mixture for the topping, then firmly press the rest into an even layer in the bottom of the prepared pan. Place into the oven until brown on the edges and center is set, about 15 minutes. Remove from the oven.
Step 5 and 6Make the Filling: Stir together strawberries, cornstarch and lemon juice. Spread strawberry mixture over the pre-baked crust in an even layer. Sprinkle the reserved crumble mixture evenly over the berry mixture.
Step 7 and 8
Bake for 20 to 25 minutes. Place the pan on a wire rack to cool completely. Make the icing and whisk until smooth.
Lift the bars from the pan. Drizzle with glaze, slice, and serve!
