This Minestrone Soup is a fast and healthy version made with vegetables, beans, zucchini and fresh basil. It can be made vegan or gluten-free if desired!

Cook the pasta seperately
Add the oil, chopped garlic cloves and onion and saute until starting to caramelize.
Add the carrots and celery. You will also want to add the dry herbs which will help bloom them so they will be more flavorful
Deglaze with white wine
Add vegetable broth and zucchini
Crush the canned tomatoes by hand
Add beans and pasta at the end and heat through.
Stir in the basil and serve!
