Preheat the oven.  Then toss the chopped veggies, oil, herbs, salt and pepper in a large bowl to coat them.

Spread the seasoned veggies in a single layer onto a large, rimmed baking sheet. You can line the baking sheet with parchment paper or aluminum foil for easier cleanup.

Transfer to the oven and roast, stirring once or twice, until browned and tender inside when tested with a fork. Serve hot or warm.
