Step 1 Preheat a convection oven to 425°F or a still oven to 450°F. Cut potatoes into wedges.

Step 2 In a large bowl, add potatoes, oil, seasoning, salt, and pepper and toss to coat.

Step 3 Once evenly coated, spread the potatoes in one even layer on a large, rimmed baking sheet. 

Step 4 Roast until golden brown on the bottom. Then, turn over one by one with a thin spatula and continue roasting until browned on the second side and fork tender. Serve hot and enjoy!
