One Pan Roasted Chicken and Potatoes

Ingredients

Step 1 Preheat oven to 425°F. Coat a large-rimmed baking sheet with cooking spray. 

Step 2 In a large bowl, toss garlic cloves, potatoes, mushrooms, olive oil, rosemary, and salt and pepper until evenly coated.

Step 3 To the prepared baking sheet, arrange the chicken in a single layer. Sprinkle both sides with salt and pepper. 

Step 4 Arrange the potatoes and mushroom mixture around the chicken pieces. 

Step 5 Bake until the chicken is cooked through and the potatoes are fork-tender and golden brown, about 50 minutes. Let rest for 10 minutes. Serve with pan juices and enjoy
