Start with a non-stick skillet, add the oil and set over medium-high heat. Add your diced veggies and cook, stirring often until they are tender and browned in spots.

Meanwhile, beat eggs with salt, black pepper and salt-free seasoning in a bowl until thoroughly combined. You can use a for or whisk to do this.
