Texas Caviar {Cowboy Caviar}

This black-eyed pea Texas Caviar with Roasted Peppers will be the hit of the party on its own as a festive side dish, or you can serve it as an appetizer dip style with chips.

Ingredients

Black-eyed peas Red bell pepper Green bell pepper Garlic Salt Canola Oil Olive Oil Red wine vinegar Lime juice Sugar Pepper Chipotle chile powder Jalapenos Scallions

Step 1 Soak peas in water for at least 7 hours. Drain and place in saucepan. Boil over high heat and cook until tender

Step 2 Broil your peppers until skin is blackened and blistered on all sides. Once done, peel off skin, remove seeds, and dice

Step 3 Finely chop garlic and add salt. Mash into paste. Add to bowl with your oils, vinegar, lime juice, sugar, pepper and chipotle powder. Whisk.  

Step 4 When the peas are tender, drain thoroughly and add to the dressing in the bowl. Stir in jalapenos, scallions and the diced roasted peppers and stir to combine.
