Ingredients

Step 1 and 2 Bring water in a large saucepan to a boil. Steam green beans until crisp tender.  Heat oil and butter in a large skillet. Add shallots and cook until just starting to brown. Add mushrooms, thyme, salt and pepper and cook. Add sherry and cook until liquid evaporates

Step 3 and 4 Sprinkle flour over the mushroom mixture and stir to coat. Add broth and milk and bring to a simmer stirring often until the sauce is thickened.

Step 5 and 6 Remove from the heat and stir in cheddar. Add the green beans and stir to combine.  Transfer to the prepared casserole dish. Top with the remaining cheddar.

Step 7 and 8 Stir together the breadcrumbs and oil in a small dish. Add paprika and onion powder and stir until the breadcrumbs are evenly moist and bright orange. Sprinkle over the casserole. Bake until bubbling and golden brown on top, 20 to 25 minutes!
