Did you know I was a personal chef way back? It was incredible! After culinary school, I worked in the restaurant world for a while, and I decided it wasn’t for me. So I landed a job as a personal chef. It was incredible. I started out with one family. The wife had celiac disease, so she couldn’t have any wheat or gluten at all and no lactose. Her diet was mostly grain free, except for rice. So my job was to keep her and her family well fed. She loved vegetables, ate organically and she particularly loved it when I made herb-crusted rack of lamb:) It was incredible, did I say that yet?low-carb-roasted-garlic-and-chevre-lasagnaI haven’t even told you that I had my own kitchen in their house. They had theirs I had mine. Yeah. Incredible I know! Anyhoo, I worked for them part time, and I ended up building a business out of it. I ended up getting my home kitchen certified, and I did a delivery service. People with dietary concerns sought me out, and I loved making healthy meals for them all. Most of my clients were just too busy to cook, and had certain foods they were avoiding, or they were interested in loosing weight. I learned a ton by trial and error during those years.


I’m telling you all this today because this Low-Carb Lasagna was my hands-down number one seller of that era. I developed it for that first client with celiac disease but I soon discovered that everyone would love it. Including me! It is great because it re-heats really well, it can feed a crowd, even those folks with dietary restrictions can join in, and the best part is that it tastes so darned good.
