Why We Love This Recipe for Dark Rum, Mint and Lime Cocktails {Ricky Bobbies}

This week I’m so excited to share the famous Ricky Bobby drink, named after our supremely fun friend Rick who invented them. They are quite simple and every bit as quenchingly quaffable as they look.

When I say they’re simple, I really mean it. No extra frills or fuss, and barely any prep. All you need are some basic ingredients (including rum, of course), ice and a pitcher.

I used limeade for this recipe, which is ten times easier than squeezing a bunch of limes. Plus, what I like about limeade is that it already has some added sweetness, so you don’t have to go and make extra simple syrup or anything.

Unlike white rum, dark rum has a sort of chocolatey-caramel flavor, which makes it a pair well with the freshness of lime and mint.

Because it’s such a basic drink, it’s a great cocktail to make when having guests over. The odds are high that everyone will enjoy it. However, if you have vodka drinkers too, you could also make this Maple Mint Vodka Spritzer.

With that being said, go make a pitcher, invite some friends over, and throw some easy marinated chicken on the grill while you sip on your Ricky Bobbies.

Key Ingredients for This Rum Mint Cocktail

Limeade

Who doesn’t love lime aid! I mean it’s delicious, it’s easy and it’s clearly a great cocktail mixer. I like to use Newman’s Own virgin limeade, but you can also use the frozen one from Minute Made or the one from Simply Beverages (both of which I’m sure you’d recognize). They’re perfectly sour without too much added sweetness.

Black rum

Black rum (or dark rum) is really great for making drinks when you want a more distinct taste. Dark rum has hints of spices, chocolate and burnt caramel, which I love in this cocktail. I prefer to use Goslings Black Seal when I made dark rum drinks, but it’s up to preference.

If you don’t have dark rum, you could always swap out for light rum instead. However, since dark rum is stronger and deeper in color/taste, you’ll have to play with the measurements a bit.

Fresh mint

Fresh mint is a game-changer in this recipe. Try to find mint that is bright green in color and smells strongly. The leaves should also be firm, and not limp and discolored. Try to buy it organic if you can–you should be able to find it in the herbs section of your grocery store.

If you are harvesting mint from your own garden, pick the leaves that look large and full. Make sure to wash any dirt off before adding to your drink.

Ice

Instead of adding ice to the pitcher, add ice to the individual glasses. That way you won’t end up with a watery cocktail mix.

Instructions to Make This Recipe

Mix the limeade, black rum and mint together in a pitcher.  Slightly muddle the mint into bottom of pitcher with muddler or spoon. Fill three glasses with ice. Pour the rum mixture over ice and garnish with more mint.

FAQs and Expert Tips

What’s a good substitute for mint?

For this recipe specifically I highly recommend going to buy some mint at the store since it’s one of the main ingredients. However, if you really need a substitute you could try thyme or rosemary instead, or just garnish with lime/lemon slices.

Can you make mixed drinks ahead of time?

Absolutely. Mix all the cocktail ingredients together and store in an airtight container in the fridge. If stored properly, it can last a few weeks.

How to freeze cocktail mix:

Alcohol won’t freeze so if you want to freeze this cocktail mix you’d have to add the rum later. Muddle the mint and limeade together and pour into an airtight container. Once ready to use, set out on the counter to thaw for a few hours.

Note: since you would only be freezing two very basic ingredients, I would recommend just making it fresh on the spot.

How to make this drink non-alcoholic:

Although the flavors are different, I would recommend using ginger beer as a rum-alternative if you’re looking to make this non-alcoholic. Ginger beer, limeade and mint taste amazing together.
