Multi-grain pizza dough recipe



  • ½ cup 8-grain cereal
  • 2 teaspoons honey or pure maple syrup, dark or amber
  • 1 cup boiling water
  • 1 package active dry yeast (2 ¼ teaspoons)
  • 1 cup white whole wheat flour
  • ¾ cup bread flour or all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon avocado oil or organic canola oil


  1. Place cereal and honey or maple syrup in the bowl of an electric stand mixer or in a heat proof mixing bowl. Pour boiling water over the cereal and let sit until warm (about 105 degrees F), about 15 minutes. Sprinkle yeast over the grains and let sit until the yeast is foamy, about 5 minutes. Add whole-wheat flour, bread or all-purpose flour and salt. Mix with dough hook until smooth and elastic, about 4 to 5 minutes. Alternatively, stir by hand with a spoon in the bowl until the mixture comes together as dough. Turn out onto a lightly floured work surface and knead until smooth and elastic, 8 to 10 minutes.
  2. Brush oil in a clean bowl. Add dough and turn to coat with oil.
  3. Cover with plastic wrap and let rise until doubled in size, 40 minutes to 1 hour. Scrape from the bowl using a bowl scraper.
