When Earthbound Farm contacted me about trying their new Certified Organic Kale Italia blend of baby kale, radicchio, arugula and mizuna my mouth started watering. It was as if my mouth already knew what I wanted to make.
My big wooden salad bowl needed (NEEDED I say!) to be filled as soon as possible with these greens, tangy Romano cheese and brightly acidic lemon dressing and topped off with some salty anchovies. {Is this strange that I willneverstopever craving this kind of thing? TMI: My mouth is watering again just writing this!} Before I had even conceived of it, my culinary lizard brain had jumped to the conclusion that I needed to procure a box of said greens STAT to make this salad happen!
I was like a salad loving freak on a salad mission. I even went to the supermarket that I vowed to never-go-into-ever-again-those-jerks (when they stopped carrying my favorite organic vanilla snap cookies to make room for their store brand cookies instead—the nerve!) to buy this kale Italia to make it happen as soon as I could possibly do it. {For the record this unnamed supermarket had redone their produce department, and I was pleasantly surprised. I avoided the cookie isle so I could leave in a peaceful state of mind.}
I made the dressing in the wooden bowl the way Caesar dressing is made table side at some restaurants. I have to confess that this dressing is not really a classic Caesar though. It is much more simple and there is no egg in it. I just whisked it in the big bowl and then added in the greens and cheese.
Then I went a little off piste and added in some crunchy toasted sliced almonds. They’re kinda magical in this salad and totally work as a healthy and grain free topping in lieu of croutons.
I love the way this salad keeps for a while after it has ben tossed, because the kale is much more sturdy than a lot of other greens, which means this would be a great addition to a buffet or potluck menu this summer.

Description
A simple and healthy Kale Caesar Romano with Almonds {gluten-free}
Ingredients
- 1 small clove garlic
- ¼ teaspoon salt
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon freshly ground pepper
- 1 5-ounce package Earthbound Farm Kale Italia
- ½ cup sliced toasted almonds
- ½ cup shredded Romano cheese
- 8 anchovy fillets, optional
Instructions
- Chop garlic, sprinkle with salt and continue chopping and mashing with the side of a chef’s knife until a paste forms. Scrape into a large salad bowl. Whisk in oil lemon, Dijon and pepper. Add kale Italia, almonds and Romano and toss to coat. Serve on four plates topped with Anchovy fillets if using.
