Why We Love This Recipe For Fudgy Greek Yogurt Trail Mix Brownies

It’s officially brownie season! That’s right. The season when you feel like every time you leave the house you need to have a plate of brownies in your hand to take to a fund-raiser, end of school potluck, graduation, birthday party… I could keep going.

In the great brownie debate, there are two camps. Fudgy or cakey? My thought is that if I wanted a cakey, then I would bake a cake. When I want brownies fudgy is the only way to go.

The intense rich chocolate flavor and that gooey and dense yet moist texture sends me to the moon.

And for good measure I added a little Greek yogurt to make them healthier and topped them off with a layer of crunchy chewy trail mix. This recipe is a win-win!

Make them to bring on your next outing, to pack in your kids lunchboxes (best mom of the year award?!), or for a delicious and healthy(ish) dessert.

Key Ingredients For These Healthy Brownies

Chocolate

Chocolate helps make these super rich and fudgy. For this healthy brownies recipe I used bittersweet chocolate since I didn’t want added sweetness. You can use semi-sweet if desired.

Turbinado sugar

Turbinado sugar is sugar that’s been partially refined, which is a little healthier than granulated white sugar. Similarly to brown sugar, it has a subtle caramel flavor. Although you can find it in all baking isles, you can use regular light brown sugar as well.

Greek yogurt

Brownies are classically made using lots of butter, but here I partially subbed in Greek yogurt for a healthier choice. Opt for non-fat plain Greek yogurt of any brand (I love Chobani).

Trail mix

To top the brownies off, I sprinkled some trail mix over top. You can also just use nuts and mixed dried fruit instead. Either use a homemade combination or get a trail mix from the store.

Additional Ingredients

  • 6 tablespoons unsalted butter
  • 3 tablespoons coconut oil
  • ½ cup white whole-wheat flour
  • 1/3 cup unsweetened cocoa powder, sifted
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • 1 tablespoon vanilla extract

Step-By-Step Instructions to Make These Greek Yogurt Brownies

Step 1: Preheat oven & grease baking dish

Preheat the oven to 350 degrees F. Coat a 9×13-baking dish with nonstick cooking spray.

Step 2: Melt butter & chocolate

Melt the butter and coconut oil in a small saucepan over low heat, stirring until melted and smooth. Add the chocolate and sugar and cook, stirring until combined (the sugar will still be granular).

Step 3: Transfer chocolate mixture

Scrape into a large bowl.

Step 4: Whisk dry ingredients

In a medium bowl, whisk to combine the flour, cocoa powder, baking soda and salt.

Step 5: Whisk in yogurt & eggs

Gradually whisk Greek yogurt into the chocolate-sugar mixture, then whisk in the eggs and vanilla.

Step 6: Combine dry & wet ingredients

Add the flour-cocoa mixture to the batter and mix thoroughly with a silicone spatula until smooth and almost no clumps remain.

Step 7: Bake brownies

Transfer the brownie batter to the prepared baking dish and spread to an even layer. Scatter trail mix over the top of the batter. Bake until the center is puffed slightly and set, 20 to 22 minutes. Set the baking dish aside to cool until room temperature, about 1 hour. Melt and drizzle the remaining chocolate over the cooled brownies, if desired.

FAQs and Expert Tips

How to make the brownies denser:

If your goal is to make really dense brownies that are somewhat fudge-like, add a little less flour than instructed. You can also underbake them by 3 minutes and pull them from the oven before the center puffs.

How to make sure these brownies come out perfect every time:

When mixing the batter, stir the ingredients until just combined. Don’t over-mix or whip. You don’t want to add too much air to the batter. You don’t want to overbake the brownies if you are looking for a more fudgy center. Better to be a little underdone than overdone in the brownie world.

How to store them:

Store the cooled brownie squares in an airtight container at room temperature for 2 to 3 days, or in the fridge for one to two weeks.
