Why We Love This Recipe for Creamy Blue Cheese and Walnut Coleslaw

All summer long, you’ll find me coming up with new ways of mixing it up in the side dish department. Like this Brussels Sprouts Slaw with Bacon and Blue Cheese and this Red White Blue Potato Salad Horseradish Bacon. I have nothing against Helathy Classic Coleslaw, it’s just that I like to experiment!!

I first had coleslaw with blue cheese back in the late nineties! It was so good that ever since then, I’ve wanted to create my own version with a few twists. I decided to add peppery radishes, toasted walnuts and a little fresh dill. And it all comes together in a light Greek Yogurt and mayonnaise dressing.

The other night I served this blue cheese slaw with grilled pork tenderloin, which was a perfect pairing. However, it’s worth mentioning that all of the flavors involved are really great for serving with beef. I think this Cajun Flank Steak would be off the hook with this coleslaw.

This coleslaw goes great at a barbecue or backyard cookout, but it is also a good side to make for game day because it is great with sliders, chili and appetizers.

Key Ingredients for This Recipe

Greek yogurt

Greek Yogurt is the best kept secret to making slaw creamy and delicious tasting without all the extra fat from mayo. Plus, you get so much added protein! I like using non-fat plain Greek Yogurt, but you can use 2% or even full-fat if you’d like.

Cabbage

I used both red cabbage and Napa cabbage for this recipe, but if you can only find one or the other that is fine too. Walnuts

Walnuts, as mentioned above, go really well with blue cheese since they’re so earthy and sweet. Toasting them even adds an extra layer of flavor. If you don’t like walnuts or have a nut allergy, use sunflower seeds or pumpkin seeds instead.

Blue cheese

You can find blue cheese in the fancy cheese section of almost any grocery store. Although any will do, I would recommend spending a few extra dollars and getting a block of blue cheese instead of the pre-crumbled. It’s so much better and fresher tasting! If you don’t like blue cheese, use goat or feta instead.

  • ¼ cup mayonnaise
  • 2 tablespoons chopped dill
  • 1 tablespoon cider vinegar
  • 1 small clove garlic, grated with a microplane zester
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 8 dashes tabasco sauce
  • 1 bunch scallions, very thinly sliced
  • 1 bunch radishes, trimmed and julienne cut

How to Make This Cabbage Blue Cheese Salad

  • Whisk together the yogurt, mayonnaise, dill, vinegar, garlic, Dijon, salt, pepper and tabasco sauce in a large bowl.
  • Add the scallions, radishes, cabbage and walnuts and stir to coat.
  • Add blue cheese and stir again to combine. Serve and enjoy!

How to make this slaw ahead of time:

This coleslaw is best made within 8 hours of serving, otherwise it can get too soggy. Assemble it, cover with plastic wrap and store in the fridge until ready to serve. If you want to make it the day before, simply assemble the slaw without the dressing. Make the dressing separately and pour over slaw before serving.
