This Grilled Corn and Peach Cobb Salad is a super yummy power salad! It includes classic Cobb goodies such as blue cheese, hard boiled eggs and bacon plus two favorite summer produce superstars: peaches and corn on the cob. It’s naturally gluten-free and primal!

Before I get into describing the deliciousness that is this Power Salad, I have to tell you something super exciting that happened last weekend!

Remember how I said that one of my goals for the summer was to paddle all the way across the main lake on my paddle board… well, I did it! I paddled a mile across all the way to New York! I wish I had a photo to share, but I am so sketchy on that thing, there was no way I was bringing my phone! And it was choppy as all get out! Actually, it wasn’t as scary as I thought it was going to be because my brother-in-law and step dad came along too. Now that I’ve done it, I’m actually really excited to do it again. Hopefully when it isn’t a strong North wind again!

Those other summer goals I mentioned how about them you ask? No I haven’t set up paddle board lessons. Thanks for the reminder.

More importantly, taking a month off of content development. That’s in my rear view mirror too as of last week. I have to say, it took a while to get back into the swing of it. I could barely figure out how to tether my camera on day one. Lol.

The month off though…. ahhh it felt so fantastically good you guys. I think I am going to have to do that every year. It went too fast to be honest!  We started with our two week road trip. [And I know a lot of you were following on instagram. Thanks for all of your DMs on my stories. I love connecting with you all there.} Then when we got back to Vermont, we moved down to our lake cottage. The girls have been doing day camps and I’ve been trucking them around to various summer activities. Lots of swimming. A bit of fishing. House guests galore. Bliss!

Grilled Corn and Peach Cobb Salad | Healthy Seasonal Recipes

One of the things that I got back into the swing of while we were on our road trip was eating a big salad for lunch every day. They really helped to fill me up, but didn’t feel so heavy, when I was just sitting in the car all day and not able to get in a good workout.

So I figured today would be a great day to share this amazingly yummy Cobb Salad with you. It’s topped with grilled peaches and corn plus the usual cobb salad suspects: blue cheese, hard boiled eggs and crumbled bacon. The flavors are AMAZING together. The sweetness of the peach and corn with the salty briny cheese and bacon is bonkers!

Oh, and the pecans! I mean… how could you not fall in love with this recipe you guys?

Then comes the dressing. Honey Mustard. {I think I just fainted.} This dressing folks, I’m telling you, it’s beyond good. The key though is that you have to find really really good honey. Like the kind that you get from the person who keeps bees. The kind that tastes of a late summer field of flowers. If you can, it makes such a huge difference. Your taste buds will thank you. And good news: this recipe makes a cup of dressing, which is 8 servings, so you’ll have left-over dressing for another meal!

Then grind on a boat load of black pepper. The more the better in my opinion.

These Cobb salads have an unusual twist! We've added grilled corn and peaches on top, in addition to the traditional cobb salad toppings of bacon, hard boiled eggs and blue cheese. Home made honey mustard dressing, and crunchy pecans make it utterly irresistible!

Ingredients

    for the dressing
  • 1 clove garlic, peeled and chopped
  • ½ cup extra-virgin olive oil
  • ¼ cup honey
  • 3 tablespoons red wine vinegar or cider vinegar
  • 2 tablespoons Dijon mustard
  • ¾ teaspoon salt
  • ½ teaspoon freshly ground pepper
    for the salad
  • 2 teaspoon organic canola oil or avocado oil
  • 2 large peaches, pits removed and cut into quarters
  • 2 ears corn on the cob, shucked
  • 1 head green leaf or or 2 small heads little gem lettuce, cut and cleaned (8 cups)
  • 4 hard boiled eggs, peeled and cut into wedges see tip*
  • 4 slices bacon, cooked and crumbled
  • ½ cup crumbled blue cheese (2 oz)
  • ¼ cup chopped toasted pecans
  • ½ cup honey mustard dressing

Instructions

  1. Make Dressing: Puree garlic, oil honey, vinegar, mustard, salt and pepper in a blender, in a mini prep or in a jar with an immersion blender until smooth.
  2. Make Salad: Preheat grill to medium heat.
  3. Brush oil over peaches and corn with a silicone pastry brush. Grill, turning once or twice until hot and charred in spots, 8 to 10 minutes. Let cool slightly. Cut corn kernels off the cob.
  4. Divide greens among four plates. Top with eggs, bacon, blue cheese, and pecans, dividing evenly. Top with the grilled peaches and corn and drizzle with dressing (reserve the remaining 1/2 cup dressing for another use), dividing evenly.

Notes

*Tip - To hard boil eggs: Place eggs in the bottom of a small saucepan, cover with cold water by several inches. Bring to a gentle boil over high heat. Allow to boil for 1 full minute. Remove from heat and let stand 12 minutes in the hot water. Drain, run cool water over and cool.
