Why We Love This Recipe For Coconut Apricot Fig Bites

Sometimes it can be a struggle to find good snacks or real food fuel that actually tastes good and isn’t loaded with random ingredients. That is where these fig energy bites come in. They’re healthy, satisfying and super simple to make.

These types of energy bites are a take on functional gluten-free bite-sized “ball” snacks. Each bite is made with natural, gluten-free and mostly organic ingredients.

Along with my Paleo Energy Balls, these are perfect for post-workout snacks too! I also love packing them in my kid’s lunch box (and they love it too, might I add).

Key Ingredients For This Recipe

Pecan halves

Pecans help to bring some healthy fats and protein into these no-bake bites. If you can’t find pecans you can use walnuts instead.

Apricots

Dried apricots are an amazing way to add some sweetness to no-bake snacks like this. You can often find them in the health food section or dried fruit section in a grocery store.

Dried figs

You can use either Turkish dried figs or California figs. Make sure to cut the stems off. You’ll also find these in the dried fruit section.

Unsweetened shredded coconut

Unsweetened coconut is much better (and healthier) than sweetened coconut here. It’s also easier to roll the balls in since it’s shredded much smaller than sweetened.

Sea salt

A pinch of sea salt takes these energy bites to the next level.

Step-by-Step Instructions to Make These Coconut Apricot Fig Bites

Step 1: Blend figs

First, make sure your fig stems are cut off, then place figs, apricots, and pecans in a food processor.

Step 2: Blend into a paste

Blend but be sure not to make it into a paste. You want it finely chopped.

Step 3: Add coconut

Transfer into a large bowl and add a pinch of salt and your coconut.

Step 4: Roll into balls

Mix well and then roll into balls/bites. Place on cookie sheet. Roll each bite in the extra coconut before storing.

Step 5: Freeze balls

Freeze for 30 minutes, then transfer to a plastic bag or container for storage.

Step 6: Save for later!

These no-bake fuel bites will keep in the fridge for up to 6 weeks.

Ingredients
